
Rootstalk is a modern American restaurant founded on the idea of connection and coming home. Chef Matt Vawter was born and raised in Summit County and spent the formative years of his culinary career in Keystone and Breckenridge. After spending a period of time away from Breckenridge, Chef Matt returned to his hometown determined to open a restaurant of his own and help grow the culinary landscape in Summit County. Chef Matt made a large step towards that goal when he won the 2024 James Beard Award for Best Chef Mountain.
From old dormant roots, Rootstalk was opened in December of 2020 in a historic home on North Main Street in Breckenridge. The name Rootstalk refers to rhizomes that are all connected via a complex underground root system. The name was inspired by the large stands of Aspen trees surrounding the community of Breckenridge. Rootstalk explores the notion of connection through the cuisine, hospitality, and beverage programs. The aim is to connect guests with farmers, ranchers, winemakers, and other producers; while providing a space where people can connect with each other during their dinner.

We invite you to dress according to individual comfort for the experience. Guests are politely asked to refrain from wearing ski or snowboard boots.

Colorado law prohibits customers from bringing their own wine or other alcoholic beverages into restaurants. As such we are unable to charge a corkage fee or allow outside wine to be brought to our restaurant.

Après runs daily from 4:00-5:00pm offering a small menu of food and drink offerings in addition to our normal a la carte or Chef’s 7 Course Tasting menus. During peak season we have limited walk in space for our happy hour, if you would like to guarantee a spot for this time we highly recommend that you make a reservation.

24-Hour Notice: To avoid a cancellation fee, please provide us with a minimum of 24 hours' notice if you need to cancel your reservation. You can cancel your reservation by 970-453-9124, Info@Rootstalkbreck.com, or through our online reservation system.
Cancellation Fee: For cancellations made within 24 hours of your reservation time, a $50 per person cancellation fee will be charged.
We understand that unexpected events can arise, and we are committed to treating our guests with fairness and understanding. While we have a cancellation policy in place to ensure smooth operations, we will use our best discretion to waive cancellation fees in cases of unavoidable circumstances, such as illness, emergencies, or other unforeseen events.
